Sadly, apples and pears don't agree with me that well, luckily strawberries do! So I made my Strawberry and Coconut Crumble instead of a traditional apple crumble. The sticky strawberries topped with a toasty, tasty crust are so divine, then top with cream, ice-cream, yoghurt or custard to take it to the next level. It’s yummy both hot and cold 😋
This healthy dessert makes a great healthy wholefood treat, filled with fibre, good fats and carbs, protein, and vitamins and minerals. 
Here it is, pictured straight out of the oven yesterday and man it smelt divine. So scrumptious!

My teens love having food they can just grab and e My teens love having food they can just grab and eat from the fridge and go so I regularly make these easy pizza's which are tasty and healthy! 
I don't put passata sauce or tomato paste on the base which seems to save them from getting soggy.
Ingredients
mix of grated cheddar, mozzarella and parmesan cheese
baby spinach
salami and ham, chopped
pitted olives, halved
finely sliced mushrooms and zucchini
pita bread
Preparation
I do these in the grill rather than the oven and I pop the bottom side of the pita bread under the grill for a minute or two until golden brown then remove from the grill, flip them over and start with the pizza toppings.
First I will put a layer of cheese, then the baby spinach, then all the rest of the ingredients and pop it back under the grill for 3-5 minutes, checking as I go to make sure they don't burn.
I rotate between things like frittata, mini-quiches, Lebanese pizzas, and cheese and spinach triangles.

"Hi Brenda, while looking for new ways to use the pumpkin from my garden, I stumbled across your recipe for roasted pumpkin dip the other day, and decided to make it this morning. I had to make a couple of small changes, but it still turned out really yummy! I'll be going away for a couple of days, so I'll take some of it with me to snack on during the trip, and leave some in the fridge for when I get back.
